Nutmeg and Pepper Catering have a tasty Apple Tart that is used for all types of events often it is topped with Meringue, Toasted Almonds or Crispy Coconut Strips... here is our recipe.
Makes 24 Mini Tarts or 1 Large Dessert Tart
8 each Organic Green Apples, Peeled, seeded and sliced
150g Organic Brown Sugar
1/2 Tsp Organic All Spice
1/2 Tsp Organic Garam Masala
1 small Organic Lime, fine zest and juice
2 Tbsp Currants
45ml Brandy (We use Napoleon VSOP)
24 Tart Shells approx 6cm in diameter or 1 large 30cm Tart Base (pre-cooked)
Apricot or Apple Glaze, Meringue Top, Toasted Almond or Toasted Coconut Strands may be used to Garnish.
In a large saucepan place apples, sugar, spices, currants, lime zest, lime juice and brandy. Leave on a low heat for up to 2 hours, stirring occasionally, the mix should be softened but not mashed.
Allow apple mix to sit in the fridge until ready to serve.
Place the apple mix into the baked Tart Shells and top with your favourite garnish.
