The guideline to a successful Baked Brie is - Use a hot oven, have a variety of crosstini, bread fingers and turkish bread available and ready to serve plus use of fresh Herbs.


1 Medium sized wheel of Brie or Triple Brie per 6 people

2 Baguettes or other Bread per 10 people (sliced and toasted, you can also rub with fresh garlic, spray with EVO)

Extra Virgin Olive Oil (EVO)

Fresh Thyme or other Herbs



Preheat oven to 200C.

Place the Brie into a large square of foil and lightly cut into 6 to 8 pieces. Drizzle a little of EVO on top and fresh herbs.

Now encase the Brie so that the foil wraps around the sides but doesn't cover the top.

Place in oven for 10 mins or until just golden and gooey but not melted completely through.

Serve on a board with your Crosstini and a pate knife.
