If you are deciding on a Breakfast option for your guests or want to set up a Pancake Station for the Kids at  a Party this is my favourite recipe.

You can substitute the Flour for Normal Self Raising Flour if you don't have Organic but try and keep to the recipe as best you can for a better quality, tasty and healthier version of pancakes.


INGREDIENTS:

2 cups Organic Self Raising Flour

1/4 Tsp Bicarbonate of Soda

1 pinch of Garam Masala

1 x 70g Organic Free Range Egg

1 Tsp Stevia or Agave Syrup

1 1/4 cup Organic Full Cream Milk

1 Tbsp Melted Butter 

Plus your favourite Toppings - I use Double Cream, Whipped Maple Butter, Organic Fruit Coulis & Organic Chocolate Syrup.


METHOD: 

Place all ingredients in a Jug and Use a stick blender to mix thoroughly. 

Heat a large Frying Pan over Medium to High Heat and lightly spray with  Olive Oil or other Spray Oil of your choice. Wipe with a paper towel to ensure there is no excess.

Pour in your mix a little at a time and allow each side to cook until bubbles form on the first side and the colour changes on the 2nd side.

Keep in a warm place or if making ahead store in a airtight container in the fridge. These are great reheated in the microwave in short 20 second bursts until warm.


Serve on a platter with your toppers in little ramekins on the side.
