Makes around 12 standard Muffins or 6 Large.
Preparation: Turn oven on to 190C or 180C if fan forced.
In a 12 or 6 hole muffin tin...line with Patty Cases according to size of hole.
2 Cups of Self Raising Flour
1/4 of Organic Garam Masala
2 drops of Quality Vanilla Essence
1/4 cup Fresh Organic Passionfruit Pulp
1/4 cup Desiccated Organic Coconut (Fine shredded)
1/2 cup Organic Raw Sugar
1 Free Range Egg - lightly Beaten
1/4 cup Olive Oil (light Olive Oil is best not extra virgin due to the strong flavour)
1 cup Organic Milk
Place all ingredients in a bowl and using a wooden spoon, combine until incorporated. Do not over mix.
Sit the mix in a cool area or fridge for at least 20 minutes. (My little secret to ensure you have not over aerated the mix)
Using an Ice Cream Scoop evenly distribute the batter amongst the muffin cases and bake in the oven for 24 mins.
Top of muffin should be firm to the touch and a little golden. Allow to cool for at least 1/2 hour.
Dust with Icing Sugar and serve.
