Garlic Prawns

This easy to make fantastic Garlic Prawns recipe can be made in less than 20 minutes..

All though this recipe is for 2 people you can double or multiply by as many couples as required for your family or dinner party.

INGREDIENTS

20 Peeled Green Prawns -  de-vain but leave tails on ( I like to buy direct from trawler or local Seafood Supplier, buy Australian only - non farmed if possible)

10 ml Extra Virgin Olive Oil

100 ml Fish Stock

100 ml White Wine (a light fruity wine is best try not to use anything sharp tasting,, Riesling or a Sauvignon Blanc works well)

200 ml Cream

50 g Butter, cold, dice

2 cloves Organic Garlic, crushed or Confit

Pinch of Himalayan Pink Rock Salt, ground

Pinch of Cracked Pepper

Your choice of Cooked Rice/Vegies or Salad to Serve


METHOD

In a large heavy based frypan, place the Extra Virgin Olive Oil and heat to a medium heat. Add the prawns and garlic then cook till just coloured through. Remove from the pan and set aside. In the same pan add the White Wine and allow to reduce by half then add in the fish stock. Allow the ingredients to reduce by half again then add in the Cream. Turn the heat up a little and allow to simmer and thicken.

Add the prawns back into the pan and toss through the sauce, Season with Salt and Pepper. Now add the butter a little at at time over medium heat and swirl until the butter has been dissolved into the sauce. Repeat until all butter is used.

Serve on your favourite rice, noodles, salad.veges.
