Our most sought after recipe from our Dessert Selection is our Chocolate Mousse. This tasty not too sweet not to sickly mousse is Chef Nadene's recipe that has been kept since her German Head Chef passed it to her during the Apprenticeship days back in the 80's. Although some of the ingredients have been altered to suit our Organic Healthy approach to Quality Food the principle and methods are unchanged.

"It is a simple recipe" Chef Nade states "but tasty and easy to prepare".

You must use at least 70% Cocoa and I prefer Organic Cocoa Chocolate. For those who don't have a supplier Aldi have a great Organic Cocoa Chocolate that is not too expensive. As you can see there is no added Sugar in this recipe which makes a healthier option to the French Style.


CHOCOLATE MOUSSE - ORGANIC

QTY 6 Serves

Ingredient List:

                                                                                                                                                                                                                            

Organic Dark Chocolate Mousse, rough chopped (70%Cocoa)200grams
Unsalted Butter (Organic, Local Churned)30grams
Eggs, separated (Organic Free Range)3ea
Thickened Cream whipped300ml

 Method: Melt Chocolate in a medium heatproof bowl over simmering water. Remove from the heat, add butter, stir until smooth. Stir in egg yolks. Transfer mixture to a large bowl, cover: cool.

Beat egg whites in a small bowl with electric mixer until soft peaks form. Fold egg whites and cream through yolk mixture in two batches.

Divide mousse amongst serving dishes and set overnight.

Garnish with shaved chocolate and a little extra whipped cream. Fresh Raspberries and other garnish can be used.
