This recipe has been adapted to suit 4 servings but you can add more as required.

INGREDIENTS
4 fresh Hamburger Buns
4 Tbsp Sour Cream
8 slices Sharp Cheese slices (Use a quality Mexican Cheese or other sharp cheese)
2 Avocadoes, halved and fanned
2 Organic Tomatoes
4 rashes of quality Butcher/Smokey Bacon
800 g quality premium Mince
1 x 70g Organic Free Range Egg
Cajun, Coriander, Cumin Spices or a pre bought Mexicana Mix
Salt and Pepper
400 g Organic Mesculin
250 g Mexican Tomato Salsa (Home made or Organic store bought)

METHOD
In a large mixing bowl add the Mince, and a teaspoon of each of the spices plus salt and pepper. Mix together until combined, add 1 egg and mix through again. Form into 4 equal Beef patties.
Place patties in the fridge and allow to rest for 10 minutes.
On a tray or large plate place the Burger ingredients ready to assemble.
Toast the burger buns and open ready to be topped... place a little of the tomato salsa on the base of the bottom buns and a little Sour Cream on the top of the bun tops.
then layer bottom with the lettuce.
On a hot griddle or flat grill.. cook off the bacon and burgers.
layer the beef onto the lettuce then top with the bacon, cheese, tomato slices, avocado fans more cheese and then the top bun.
Serve with Tortilla Chips and a Mexican Salsa Salad.
