Cranberry Brandy Cheesecake

Recipe Request: Here is a fantastic Cheesecake we made for a client recently who also requested the recipe.

INGREDIENTS:

500g Cream Cheese

1 Tsp Vanilla Bean Paste

250ml Condensed Milk

1 Tbsp fresh Lemon or Lime Juice

200g Fresh or strained frozen Cranberries

2 Tbsp Brandy

200g Biscuit Crumb

1/2 Tsp Garam Masala

3 Tbsp melted Butter

METHOD:

Grease and line a 23cm Springform Cake Tin with Baking Paper.

Mix the biscuit crumb, melted butter and Garam Masala together in a small bowl and then press into the bottom of the lined cake tin.

Place in refrigerator to set for at least 30 minutes.

In a food processor or mixing bowl place the remaining ingredients and mix until smooth.

Spoon the mix into the cake tin. Allow to set overnight.

Garnish with Grated White Chocolate, Cranberry Jelly (pictured) or your favourite topping.
