Nothing tastes better than a couple of Lamb Kofta Skewers with Organic Salad and your choice of dipping sauce.

Chef Nadene shares her easy to make Lamb Kofta Recipe for all to enjoy. If you prefer Beef or Pork just substitute the Mince. Please note this recipe is Gluten Free.

Makes Finger Food size for 10 pax or Entree size for 4.

INGREDIENTS:

500g Lean Quality Organic Lamb Mince (Halal is best if you can get it)

2 Tbsp Organic Cumin Powder

2 Tbsp Organic Coriander Powder

1 Tbsp Organic Smokey or Sweet Paprika

1 Tbsp fine chopped Fresh Organic Garlic

1 Tsp Himalayan, fine ground Salt

1 Tsp Cracked Pepper

1 Tsp Organic Turmeric Powder


METHOD:

Place the mince and all other ingredients in a bowl. Mix thoroughly until well combined. Cover and rest in the refrigerator for at least 2 Hours.

Take mince out of the refrigerator, and using an ice cream scoop to suit your preferred size, scoop out the mince then form into oval shapes. 

You may then proceed to to skewer each with either canape or normal bamboo skewers to suit your event.

Turn on Char Grill or Use a Frying pan on medium heat. Spray with a little oil then once your surface is hot (but not smoking), grill each kofta, turning frequently until cooked through. Serve immediately. 

Serve with your favourite dipping sauce: suggestions - Tzytzyki, Whipped Garlic, Hummus, Capsicum or other.

Goes well with a nice light Rocket Salad drizzled with Balsamic Vinaigrette.
