You can use any type of Tomatoes that you are either growing or locally sourced. We prefer to use Organic for enhanced flavours.

All though this recipe is aimed at Air Fryers - you can also do this in a Dehydrator and Oven if you don't have one.

Ingredients:

Your choice of Tomatoes

Fresh Bunch of Basil - you can use any type here also Green, Purple or Greek what ever you decide will enhance the flavour of your tomatoes

Ground Pink Himalayan Salt

Lemon infused Olive Oil (can be found in most supermarkets)


Method:

With your tomatoes wash them and then pat dry with a piece of paper towel. If using Cherry Tomatoes Keep them whole, other tomatoes cut into quarters or 8ths depending on the size.

In a little bowl place a little Lemon Oil and finely shredded Basil leaves.

Toss your tomatoes through the oil then place onto your oven tray or Air Fryer tray. 

Sprinkle with a little of the Salt to balance the sweet with the savoury.

Air Fry on Dehydration mode at 80 degrees Celsius for approximately 4 Hours depending on the size of your tomatoes. Keep checking every half hour. You will know when they are done if they are shrivelled but still a little moist. 

Take out of Air Fryer and allow to cool a little. 

Heat enough Lemon Oil, to 60 degrees Celsius, to cover your tomatoes. (This will keep your tomatoes from going mouldy or cause botulism) 

Store in an airtight container covered with oil and in the refrigerator.
